Cooking In High Altitude
Special Considerations In Thin Air Cooking at a high altitude requires some special considerations. Evergreen and the surrounding areas are more than a mile above sea level. The thin air has less oxygen and atmospheric pressure, which makes water boil at a lower temperature and baked goods rise faster. Old recipes will need to be changed for altitude factors and special cooking methods are needed for meat and poultry. Local bookstores feature high altitude cookbooks, and you can also learn more from the United States Department of Agriculture.
